Homemade Lattes for Autumn

Happy Autumn! Having coffee is a happy part of my daily ritual and as we embrace the coziness of fall, there's nothing quite like sipping on a delightful cup of coffee to accompany merry mornings. Tasty and comforting, coffee is lovely but if not consumed with proper nutrition, coffee can lead to a few health issues such as insulin resistance, lowered gut health, & more.
With that being said, here are some homemade coffee recipes that are pro-metabolic, they are nourishing so you can rest assured that your cozy drink isn’t doing more damage than it is good to your morning! These recipes are lovely for fall - filled with warm spice and fresh puree. I've been working on incorporating yolky coffees into my daily rountine since learning about pro-metabolic eating. Yolky coffees are yummy & loaded with important protein and healthy fats!
Pro tip: I stumbled upon the wonders of pro-metabolic coffee through the informative posts by @noellekovary on Instagram. Trust me, you'll want to follow her for more joyful inspiration!

Good Morning Fall Latte

Start your day with a burst of autumnal warmth! , infuses your coffee with the perfect blend of warm spices and fresh puree. Not only is it a treat for your taste buds, but it's also a pro-metabolic powerhouse, ensuring your morning indulgence is as good for you as it is delicious.

Ingredients

1-2 tsp pumpkin puree 1-2 organic egg yolk
1 tablespoon sugar of choice
1-2 tsp pumpkin puree
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg 1 Scoop Colostrum (15% off code is linked) or Collagen (Linked!)
1 cup milk (Raw preferred but not necessary, do you love)
5 oz strongly brewed coffee or 1-2 shots of espresso

———

1. In a little bowl combine the yellow egg yolk and sugar. You’ll whisk for 3ish minutes until the mixture is thick like that of a custard. Add in the delicious pumpkin puree, spices, and colostrum (or collagen), continue to whisk. (meanwhile froth or warm your milk)
2. Add the yolky pumpkin mix to a mug and add the coffee. Mix well to combine. Warm and froth your milk (This is the espresso machine with milk frother that I use) Add the frothed milk and sprinkle with cinnamon.

Add some more yum to this recipe: I love adding an even more homemade & healthy touch to this recipe by making my own pumpkin puree (bonus points if you grew the pumpkin in your own garden).

Directions for Homemade Pumpkin Puree: Preheat your oven to 400 degrees! Cut the cute pumpkin in half. Place on a parchment-lined baking sheet and for 50 or so minutes. Cook it until the pumpkin is nice and soft and beginning to get a lovely caramelization going. Allow to cool then scoop out & compost the seeds. You’ll then puree the tasty, meaty part of the pumpkin. Store in the fridge for about a week or you can batch prepare & freeze. You’ll want to make one of the ‘Good Morning Fall’ Lattes as soon as your pumpkin puree is ready, nothing like a fresh & healthy cup o’ joe!

1) Pour the bone broth into a small saucepan and heat it gently over medium-low heat until it becomes hot and steaming but not boiling. 2) Brew your coffee while the bone broth warms, dance from the stove to the coffee maker 3) Whisk in maple syrup, butter, ceremonial cacao (will need to be grated), egg yolk (optional), tumeric, black pepper, cinnamon, Continue to whisk until everything blends well, sing a tune while you whisk! 4) Heat the milk and colostrum and a dash of maple syrup in the saucepan over low-medium heat until it’s good and warm & ready for you to drink it. Use a milk frother or quickly whisk by hand to get a lovely froth. 5) Grab your choice of mug and first pour the broth mixture then the milk! Garnish with a couple of thinly chopped rose petals and enjoy with intention.
